Sweet n Spicy Sandwhich

Tender slow cooked beef served atop a Ciabatta bread thick slice dipped in the sauce used to cook the beef.

For a ~5 pound top round roast beef piece –

-          Use one 16Oz can of a heavy stout (I use Guinness), 2 cups of sweet baby rays original bbq sauce, 1.5 TBSP each of dried thyme, Sea Salt, black pepper & Cayenne pepper.
-          Spread thyme,  cayenne pepper, salt n black pepper on the meat liberally and let sit in fridge overnight
-          Add the meat, sauce n beer into a slow cooker and cook for 20 hrs on low setting.
-          The meat should be absolutely tender and be falling apart.

Serve roughly 1 cup prepared meat atop a slice of Ciabatta with some unsalted butter on it. Use another slice dipped in the juice in which the meat has been cooking to cover the sandwich.

A side of sautéed veggies does good justice to this sandwich.

This meal is well accompanied by a rich Amber Ale – Try the Ommegang Rare Vos Amber Ale – one of my favorites.

Thought of the day – Treat the left over juices from the cooker as an Au Jus dip for the sandwich. Or use the juice as sauté base for the veggies.
