Spicy Beer Butt Chicken

A whole cooked chicken is always a nice white meat for a meal. My favorite to make a whole chicken is a beer butt chicken.

-          One whole chicken cleaned and ready to cook with skin.
-          A can of 12 Oz beer – I prefer spiced ale – like pumpkin spiced ale.
-          1 TBSP each of salt, pepper, all spice and Cajun spice.
-          Liberally spread the mix of above spices all over the chicken. Use a little Olive oil if needed.
-          Open the can of beer and stick it into the chicken cavity.
-          Preheat the oven to 400F. Place the chicken vertically standing in baking dish & cook for 1.5 hrs. at the least.
-          Ensure chicken is fully cooked from the inside.

I like to serve this chicken with a simple salad with iceberg lettuce, tomatoes, avocados, red onion, bell pepper, chopped pickles & jalapenos. Use your regular Caesar salad dressing. A bit of tabouli is always great with oven cooked chicken.

Any light lager goes well with this preparation. Try the Kronenbourg 1664 – my French favorite.

Thought of the day – The chicken goes great with any vegetable lightly sautéed likely peas or green beans. If salads are not your cup of tea – go for the veggies.
