Today was a unique Saturday – Amy wanted some comfort food & I wanted something healthy. So I did a blend. This is a rue exception of sorts.
Baked Chicken Samosas served with a blend of Cholula spicy sauce & sour cream.
Open face wild caught salmon burger prepared with Alaskan wild caught salmon, bread crumbs, breaded onion rings & an egg and shallow fried for 5-7 mts.
Served over an organic wheat bun, blue cheese, tomato, onion, avocado, chopped pickles & mayonnaise.
A side of home cooked fiery russet potato wedges prepared with cayenne, smoked paprika, thyme, garlic, salt n pepper.
Additional, small side, of dill n tomato salad done in yogurt to cut the spicy potato wedges blend's perfectly with this meal.
Now usually I go for a nice bottle of Chardonnay (white) with fish but today I was in mood for a Syrah (red) for some reason. Since I did not have one in the basement I want for a substitute - a Syrah dominating blend – the Gerard Bertrand La Clape. Even though this bottle goes well with poultry & red meat for the most part, I loved it with the fish burgers. Give it a try.
Thought of the day – while baking the potato wedges -> do it in two times slot in the oven – when the first time slot is done, only then dab the fries with garlic and put in to bake for second slot.
