Masala Ribs Sunday.


Hey friends – Have not posted for a few days. Had a crazy week at work – I’ll leave it at thatJ. Been eating out or passing food a lot – and resorting to the freezer at times.

Today had to be something different – Kind of a starting to cook again after a long break day.

Masala Baby Back Ribs served with a side of spicy Cumin n Onion sautéed potatoes & Vinegar scallions.

This dish pairs excellent with a heavy Quadrupel Ale. Try the Ommegang Three Philosophers Quadrupel Ale.

Thought of the day – To get the most flavorful of the potatoes, ensure you are stirring them every 1-2 mts and except for the initial sautéing of the onions, the cooking is on medium heat.

As always – Love is the most important ingredient.

Masala Ribs

Ingredients

-          2 tsp each of Coriander powder, Red Chili powder, Cumin powder, Black Pepper, Crushed Cloves, Sea Salt**, Garlic powder, Turmeric, dried Ginger, Cardamom powder
-          3 tsp of Garam masala
-          1 rack of baby back ribs (~3 pounds)
-          2 TBSP Olive Oil.

**U can vary the salt amount to taste

Recipe

-          Mix all of the spices in a small bowl to form a homogeneous masala mix.
-          Dab each side of the pork with Olive oil and cover coat with the masala mix evenly (around 4 TBSP each side).
-          Wrap the rack in aluminum foil and let marinate for at least 12 hrs.
-          Set a gas grill at medium high for 10 mts.
-          Grill the rack 2 mts on each side twice (for a total of 4 mts each side)
-          Transfer the ribs back into the aluminum foil – meat side up. Ensure the foil is not leaking any fat.
-          Pre heat an oven at 300 degrees F.
-          Place the covered ribs on the top rack for 2 hrs.
-          Cut the rack to pair 2 ribs together. Serve with side of spicy onion & cumin powder sautéed potatoes & vinegar scallions.
