Simple Steak Monday

Steak n Fries with Monday night football is a combo I have always hoped to better – only hopedJ. Today I did something different to match it and I think I came pretty close I’d say.

Filet Mignon done medium rare – Use garlic salt n black pepper with a dash of Olive oil on both sides and sear on medium heat for 3 mts on both sides. Let stand for a mt before serving.

For the side I made sautéed spinach with red raisins.

Heat 3TBSP olive oil in a heavy skillet. Add ½ cup of seedless red raisins and fry them till all of them look plump. Add ½ pound baby spinach 1 cup at a time into the skillet and mix it into the raisins. Don’t need to add anything else p just ensure all the spinach is sautéed.

This meal goes great with red wine – My favorite is zinfandel but today I paired it with a blend – try the 2012 Apothic Red – Exceptional body to go with the meat.

Thought of the day – Cook the spinach at-least ½ an hr prior to eating and let it marinade in the raisin flavor.

As always – Love is the most important ingredient.
