Easy (& Breezy) Tuesday – Kind of a welcome winter day.
Wild caught Atlantic Salmon baked with Pesto butter, Olive oil, Garlic powder, dash of Rice vinegar, Basil, Parsley, Dill, Sea Salt n Pepper.
The above is done very simply in a preheated oven at 400F for approx. 20-22 mts.
Served with a simple sautéed spinach dish done with rye seeds, golden raisins & olive oil.
Start by sautéing the raisins n rye seeds till raisins start looking dash swelled. Progressively add Spinach and keep stirring. Once all spinach is added cover & let simmer for 5 mts.
The above dish goes great with a dark beer which is not too heavy or over powering in taste and yet carries body. Try the Innis & Gunn oak aged beer. This is one of most revealing pairings for Me.
Thought of the day – Let the sautéed spinach in raisins sit for an hr. covered before consuming – it allows for the raisin flavor to get blended well with the spinach. Also, use Olive oil liberally here.
