We all, almost always, have a little bit of turkey left over from thanksgiving. I have always loved to experiment with the leftover turkey & tried to make something different. This is a very simple to make sandwich and it is very full flavored with just the right kind of sweetness for the holiday season.
Sandwich with turkey sautéed using Gluhwein (hot mulled wine) served atop a roasted lightly crisp ciabatta and Swiss cheese & sliced pickles. Use ½ cup of wine for every one cup of boneless turkey pieces removed from the leftover turkey. Use 2 cups (pre sauté amount) of turkey per sandwich. This sandwich goes very well with a side of simple salad – baby greens, avocado, bell peppers & chopped pickles tossed in Asian peanut sweet vinaigrette.
Ale brewed with spices is the perfect pairing for this sandwich – Try the Sam Adams White Christmas.
Thought of the day – Sauté the turkey on low heat & ensure the pieces are no bigger than ½ an inch each.
