Monday Trials

Today I cooked something I have never tried before. A bit of Mexican blended with a bit of Indian.

They call it the “Carne Guisada” in Mexico – It’s an awesome preparation to serve a relatively inexpensive piece of meat deliciously.
Stew beef sautéed n slow cooked with olive oil, cumin powder, garlic powder, red pepper, onions, bell peppers & some flour. Use salt n pepper to taste.
Served well with a burrito or even better – boiled basmati rice with a cinnamon stick & cardamom. Scallions add a perfect crunchy condiment.
An Indian raita made with yogurt, grated cucumber, onions n tomatoes and a dash of dill plus paprika makes for a perfect balancing dish for the spices.

This dish goes great with a smoky Zinfandel – Try the 7 deadly Zins.

Thought for the day – marinade the stew beef with some salt, pepper n dried basil overnight for an explosion of flavors. It also helps in the meat getting a little bit tender to start with in my experience.
